My Favorite Recipes of 2018

I have a lot of favorites, but I think this post sums up my year in food. I made some big diet changes this year and I think I was able to prove that healthy food really can taste amazing. I actually prefer eating healthy even though my sweet tooth still kicks in sometimes, but hey, I'm just human.

Coconut Almond Energy Bites - Ever since I made this recipe back in the Spring, I have made it over and over again. We love these energy bites and they're the perfect "treat" when you need something sweet.

Strawberry, Mint & Lime Cooler - This drink is sooo dang good! It's pureed strawberries and mint in a sea of lemon-lime soda and I don't think anything tastes more like summer. You've got to try this one out!

Thai Turkey Lettuce Wraps - This is one of my all-time favorite recipes from this year! These lettuce wraps are mouthwatering and are a great intro to ground turkey if you've never used it before. I honestly love ground turkey so much more than ground beef now.

Gooey Coconut Butter Chex Treats - During the time I eliminated dairy to see what was bothering my gut, I decided to make these coconut butter Chex treats. And let me tell you, it was one of the best decisions of this year. SO gooey and delicious!

Strawberry Bacon Salad with Strawberry Jam Dressing - This is one of those recipes that was clearly created in heaven. Strawberries and bacon were meant to be together and the strawberry dressing is out of this world! You've got to try this salad.

Roasted Sweet Potato and Black Bean Enchiladas - I have been a fan of roasted sweet potatoes and black beans for years and I finally got the idea to try them in enchiladas. These are so tasty and make a great vegetarian dish with tons of flavor!

Toasted S'mores Rice Krispies Treat - These babies came after trying a mediocre recipe. I wanted a Rice Krispies treat that tasted like it had a campfire s'more on top and I think I succeeded. The result was perfection!

Grilled Chicken Cordon Bleu with Dijon Vinaigrette - I love new chicken recipes and this one is a winner! I love this take on the classic because it's lighter and has so much more flavor. You definitely need to try this recipe if you haven't!

Slow Cooker "Baked" Potatoes - I think this was literally the most life-changing recipe I posted this year. Or maybe in my blog's lifetime. I have never been able to successfully bake a potato in the oven so these slow cooker potatoes are a game-changer. They're perfectly cooked and basically require no skill. They're amazing!

No-Bake Cinnamon Honey Bliss Bars - These bad boys came at a time where I was restricting refined sugar and I don't think anything has ever tasted better to me. I named them bliss bars because that's what they are. Pure bliss. These are a must-make for sure!
