Coconut Almond Energy Bites

If you're like me, it's hard to find healthy snacks to eat at home or on-the-go. It's easier to grab something processed and sugary to eat.

Enter these energy bites that are packed with protein and healthy fats that will give you that extra boost in your day!
These are so easy to mix together and they're a great treat to satisfy your sweet tooth without all of the unnecessary sugar. I'm obsessed with them!
 I personally love to store them in the freezer. They're the perfect snack to keep my appetite satisfied during the day. The only issue I run into is trying to not eat them all in one sitting!

Coconut Almond Energy Bites
Adapted from Belle of the Kitchen
1/3 cup coconut oil, melted
1/3 cup honey
1/2 cup almond butter
1 tsp. vanilla extract
2 cups old fashioned oats
1 cup coconut flakes
1/4-1/2 cup mini or regular chocolate chips
1/4 cup ground flaxseed, optional

1. Combine coconut oil, honey, almond butter and vanilla extract in a large mixing bowl. Whisk until combined. Add in oats, coconut flakes, chocolate chips and flaxseed. Mix until well coated.
2. Transfer bowl to the freezer for 20 minutes so mixture is easier to work with. Remove and using a cookie scoop, form mixture into balls. You will need to pack the ingredients together well in your hands before you shape it into balls.

3. Place energy bites in an airtight container and store in the refrigerator or freezer.
