Gooey Coconut Butter Chex Treats

I'm not sure I can find the adequate words to describe how good this stuff is. But I can tell you that two people can easily eat a panful in one sitting and only want more.
I decided to cut gluten and dairy for a bit recently, but I really wanted a treat. Cereal treats are my love language and I knew it's exactly what I wanted. Enter these Chex treats using coconut butter, which is something completely knew to me and amazing.
And if you don't have any coconut butter on hand, well buy some. You can also use coconut oil to get the same flavor, but I swear the coconut butter made the marshmallow mixture creamier.
I mean just look at that gooeyness?? Doesn't it make you want some? Like right now?


Gooey Coconut Butter Chex Treats
1/4 cup coconut butter (you can also use coconut oil)
4 cups mini marshmallows
6 cups Rice Chex cereal
1/2 cup coconut flakes or chips, optional

1. Melt 1/4 cup coconut butter in a large pan over low heat. Add marshmallows and stir until completely melted. 
2. Add Chex cereal, one cup at time, stirring after each addition. Stir until well coated. 
3. Pour cereal into a lightly greased 9x13-inch pan and press down into an even layer.
4. If desired, place coconut flakes or chips onto a baking sheet and bake for 5 minutes at 350 degrees F. Be sure to keep an eye on them so they don’t burn. Sprinkle coconut on top of cereal mixture and serve.
