Thai Turkey Lettuce Wraps

 These lettuce wraps make the perfect summer meal! You'll only need to turn on your stove for a few minutes and you'll have yourself a light and flavorful dinner.
I seriously loved this dish because it has so much flavor without a lot of effort. You'll feel like you're eating out at your favorite Asian restaurant.
Be sure to try these this summer while it's nice and hot outside when all you want is an easy, delicious meal!

Thai Turkey Lettuce Wraps

1 Tbsp. olive oil
1 Tbsp. sesame oil
1 lb. ground turkey
1 small onion, diced
3 tsp. minced garlic
1 tsp. ground ginger
1/3 cup hoisin sauce
3 Tbsp. low-sodium soy sauce
2 rounded tablespoons Thai Kitchen Red Curry Paste
1 Tbsp. rice vinegar
1/2 tsp. black pepper
1 1/2 cups shredded carrots
1/4 cup finely minced fresh cilantro; reserve 1 tablespoon for garnishing
a head of butter lettuce (also called living lettuce), serrated into leaves for serving 

1. In a large skillet, add the oils and turkey and cook over medium-high heat until turkey is cooked through; stir often crumble while cooking.
2. Add the onion and cook about 5 minutes, or until onion is soft and translucent.
3. Add the garlic and ginger, stir to combine and cook for about 1 minute, or until fragrant.
4. Add the hoisin sauce, soy sauce, Thai curry paste, rice wine vinegar and pepper, stir to combine.
5. Add the carrots and cook for about 2 minutes or until carrots are crisp-tender. Add 1/4 cup cilantro and stir to combine.

6. Spoon about 1/4 cup of the mixture into each of the lettuce leaves, evenly garnish with reserved cilantro and serve immediately.
