Greek Veggie Dip

I don't know about you, but this time of year I crave all the veggies! I also love Greek flavors so this dip is a great combo of both. This dip is packed with crunchy veggies mixed in the best vinaigrette. Serve it with some storebought or homemade pita chips and you have yourself a great appetizer or even a quick lunch! This is also a great way to use up any unused veggies you may have in your fridge. Remember you can always switch up the veggies that it calls for to make it exactly how you want it.

Greek Veggie Dip

10 oz. grape tomatoes, diced

1 medium cucumber, diced

1 red bell pepper, diced 

1/2 red onion, finely diced

1/2 - 3/4 cup feta cheese, crumbled

storebought or homemade pita chips for dipping


Vinaigrette

1/4 cup olive oil

3 Tbsp. red wine vinegar

1 tsp. minced garlic

3/4 tsp. kosher salt, to taste

3/4 tsp. black pepper

1/2 tsp. sugar

2 Tbsp. fresh dill, finely chopped


1. In a large bowl, add tomatoes, cucumber, red pepper and red onion. Stir to combine.

2. In a glass jar with a lid, add olive oil, vinegar, garlic, salt, pepper, sugar and dill. Cover with lid and shake to combine.

3. Pour vinaigrette over veggies and stir until evenly coated. Add feta cheese and gently stir to combine. Serve with pita chips or eat as is.
