Funfetti Chip Cookies

When I found some Funfetti chips at the grocery store, I knew I needed to make a fun sprinkle cookie with them right away. The chips have such a great cake batter flavor and really add to the flavor of these cookies. Not only do they taste great, but they make the happiest cookie with those sprinkles. These cookies are so soft, buttery and completely addicting. You've got to make some!

Funfetti Chip Cookies

Makes about 19 cookies

1/2 cup butter, softened

3/4 cup sugar

1/2 tsp. vanilla extract

1 egg

1 1/2 cups flour

1 Tbsp. cornstarch

3/4 tsp. baking soda

1/4 tsp. salt

1/4 cup sprinkles

1/2 cup Funfetti chips, more for topping

1. In a stand mixer with the paddle attachment, combine the butter and sugar until smooth. Add the vanilla and egg.

2. Mix in the flour, cornstarch and baking soda, then add in sprinkles and Funfetti chips. Mix until just combined.

3. Using a cookie scoop, form the dough into balls, place on a plate and cover with plastic wrap. Chill in the fridge for 1 hour.

4. Preheat oven to 350 degrees F.

5. Place dough on a baking sheet lined with parchment paper or a silicone baking mat. Bake cookies for 10 minutes and let stand for 5 minutes before transferring to a cooling rack. Place a few Funfetti chips on each cookie while still warm, if desired.
