Mexican Tortilla Roll-Ups

You know when you're supposed to bring an appetizer to a party and you can't think of anything to bring? Well I've got you covered with these Mexican Tortilla Roll-Ups! I've yet to meet anyone that doesn't love Mexican food/flavors so they are bound to be a hit at any get together. They're easy to serve and are nice and filling, too. They come together in no time, too, which is always a big plus!

You can also check out these Turkey Cranberry Pinwheels and Cranberry Feta Pinwheels that make great appetizers as well!

Mexican Tortilla Roll-Ups
Adapted from Culinary Hill
1 (8 oz.) package cream cheese, softened
8 oz. sour cream
1 cup shredded cheddar cheese
1 (4 oz.) can diced green chiles, drained
1/2 cup cilantro, roughly chopped
1/2 cup black beans, drained and rinsed
1/2 teaspoon garlic powder
1/2 tsp. chili powder
1/4 tsp. cumin
5 (8-inch) flour tortillas

1. In a medium bowl, combine cream cheese and sour cream with a hand mixer until well combined.
2. Using a large spoon, stir in cheddar cheese, green chiles, cilantro, black beans, garlic powder, chili powder and cumin. Stir until combined.
3. Lay one tortilla at a time on a flat surface and spread evenly with about 1/2 cup of the filling making sure it completely covers the tortilla. Roll the tortilla tightly and wrap in plastic wrap.

4. Repeat with remaining tortillas, wrapping each in plastic wrap. Place all tortillas in the refrigerator for at least 2 hours or overnight. Slice in 1-inch pieces to serve.
