Oriental Chicken Salad with Orange-Sesame Dressing

There's nothing I love more than a good salad with lots of yummy toppings and it's even better when the dressing is amazing. This Oriental Chicken Salad has so much flavor and is really easy to put together. It's perfect for a weeknight meal or a family party!
You can easily adjust the toppings to suit your taste, but I especially can't get enough of wonton strips on top! I always needed that extra crunch when I'm eating a salad. If you need something a little lighter than this is a great option!


Oriental Chicken Salad with Orange-Sesame Dressing

Dressing
zest from one large orange
1/3 cup fresh orange juice
6 Tbsp. rice vinegar
4 Tbsp. honey
1/2 Tbsp. dried onion flakes
2 tsp. garlic, minced
1 Tbsp. sesame oil
1 Tbsp. soy sauce
3/4 cup canola oil
1 Tbsp. toasted sesame seeds
Salad Ingredients
1-2 chicken breasts
16 oz. romaine lettuce
Toppings: cilantro, sliced or shredded carrots, orange or mandarin orange wedges and Wonton strips

1. Wash and zest orange and set zest aside. Place orange juice, vinegar, honey, onion flakes, garlic, sesame oil and soy sauce in blender and blend until smooth. With blender running on low, slowly drizzle in oil in a small, steady stream, to emulsify. Add orange zest and pulse to combine. Place dressing in a lidded jar and add sesame seeds, shaking to combine.  Refrigerate until ready to use.
2. Heat 1 Tbsp. of olive oil and 3 Tbsp. of water over in a medium frying pan over medium-high heat. Season chicken breast(s) with salt and pepper and place in pan. Cover with lid and cook until the bottom half of the chicken is white. Flip over and finish cooking, covered, until the internal temperature is 165 degrees F. Remove chicken from pan and slice or shred and let cool.
3. Make individual portions or one large serving of salad with lettuce, chicken and toppings. Toss with dressing and serve.
