Chocolate-Covered Strawberry Chex Treats

If you didn't know, I love any kind of cereal treat and I thought it would be fun to make a Valentine's inspired one. Chocolate-covered strawberries scream Valentine's Day and these Chex treats are really something special.

These would be perfect for kids and adults alike because they're basically a fancy Rice Krispies treat. They're also gluten free, which makes them great for a big crowd. You should definitely try them ASAP!


Chocolate-Covered Strawberry Chex Treats
1/4 cup butter
10 oz. bag mini marshmallows
7 cups Rice Chex cereal
1 cup freeze-dried strawberries, broken into similar size pieces
1/2 cup semi-sweet chocolate chips

1. Spray a 9x13-inch baking dish with nonstick spray then set aside.
2. Melt butter in a large pan over low heat. Add marshmallows and stir until completely melted.3. Stir in Chex cereal 2 cups at a time until coated. Stir in freeze-dried strawberries until evenly distributed.
3. Press cereal mixture into baking dish and let cool completely. 
4. Microwave chocolate chips in a microwave-safe bowl for 15-30 second intervals, stirring between each interval, until completely melted. Using a fork, drizzle melted chocolate over cooled cereal mixture. Let chocolate set up before serving.
