Churro Chex Mix

 
If you know me at all, you know I love anything cinnamon, but I also love cereal treats! I love the crunch of the cereal with the added sweetness. This Churro Chex Mix has both of those things and is so addicting. You can either eat this when it's nice and gooey or bake it so it gets super crunchy. Either way is great!
This is a great treat to bring to a party or any get together. It's also great to eat at home when you want something yummy to munch on!

Churro Chex Mix

8 cups rice or corn Chex cereal

3/4 cup brown sugar

1/2 cup white sugar

1/2 cup unsalted butter

1/4 cup light corn syrup

1 1/2 tsp. ground cinnamon

1/4 tsp. baking soda


1. Preheat oven to 350º F. Line a large baking sheet with parchment paper. Set aside.

2. Place cereal in a large bowl. Combine white sugar and cinnamon in a small bowl and set aside.

3. Combine brown sugar, butter, and corn syrup in a medium saucepan over medium heat and bring to a boil. Cook, stirring continuously, for 1 minute.

4. Remove mixture from heat and stir in baking soda, then pour mixture over cereal.

5. Toss everything together until evenly coated. Evenly pour and stir the cinnamon sugar over the cereal until coated. Transfer cereal to lined baking sheet and spread into an even layer. (You can either let this cool or bake for a more crunchy treat in the next step.)

6. Bake for 6 minutes, then flip cereal over and cook for another 2 minutes or until cereal is golden brown.

7. Remove mixture from oven and let cool completely. Break into large pieces and store in an airtight container.
