Chicken Cordon Bleu Quesadillas

You know how sometimes you have a really good idea and you have to do something about it right away or it might never happen? Well that's how I felt about making these quesadillas. I thought there really couldn't be any better combination than the flavors of chicken cordon bleu so why not stuff it inside of a couple tortillas, right?
And if this gooey picture doesn't reel you right in I don't know what will! These are so easy to make and the result is fantastic. They were a huge hit at our house and I bet they'll be one at yours, too!

Chicken Cordon Bleu Quesadillas

Makes 4 quesadillas
2 chicken breasts
oregano, garlic powder, salt, pepper for seasoning chicken
3 Tbsp. olive oil, divided
1/4 cup + 2 Tbsp. mayo
3 Tbsp. dijon mustard
8 flour tortillas
12 slices deli ham
10 slices Swiss cheese

1. Sprinkle both sides of chicken breasts with oregano, garlic powder, salt and pepper. In a large skillet over medium-high heat, heat 2 tablespoons olive oil. Add chicken and cook until golden and cooked through, about 8 minutes per side. Let rest 10 minutes, then slice into strips.
2. In a small bowl, add the mayo and dijon mustard and mix until well combined. Set aside. 
3. To assemble the quesadillas: Spread about 2 Tbsp. mayo-mustard sauce onto 4 tortillas, then top each tortilla with 3 slices ham, sliced chicken and 2 1/2 slices of Swiss cheese (break in half to make them fit). Place remaining 4 tortillas on top.
4. On a griddle or large skillet over medium heat, heat remaining 1 tablespoon oil. Working one at a time, cook quesadillas until both tortillas are golden and cheese is melty, about 3 minutes per side. Using a pizza cutter, cut into wedges and serve while hot.
