Peanut Butter Granola

I love homemade granola and have a few recipes for it on the blog, but this one is fun and healthy, too! It only has 6 ingredients and I guarantee you have them all in your pantry. This granola is really good on its own or in a fruit and yogurt bowl like pictured above. It makes the perfect breakfast or snack food and comes together in no time at all!

Adapted from Joy Food Sunshine

2 cups old-fashioned oats

1/2 tsp. cinnamon

1/4 tsp. kosher salt

6 Tbsp. creamy peanut butter

1/4 cup honey

1/2 tsp. vanilla extract

1. Preheat oven to 350 degrees F. Grease a large baking sheet and set aside.

2. In a small bowl, mix together oats, salt and cinnamon. Set aside.

3. In a large microwaveable bowl, melt the peanut butter and honey in 15 second intervals, stirring until smooth. Stir in vanilla.

4. Stir in dry ingredients and mix until well combined. Spread mixture on prepared baking sheet.

5. Bake in the preheated oven for 25 minutes, gently stirring the granola halfway through. Remove from oven and let sit until cooled. Once cooled, break apart and eat.
