Caramel Toffee Chex Mix

I love to bring cereal treats to almost any party and I decided to make this Caramel Toffee Chex Mix for the Super Bowl. It has everything anyone could want in a cereal treat! It's loaded with caramel, chocolate, white chocolate and toffee bits! It was a huge hit and gone by the end of the night. It's definitely one I'll be making again and again. The microwave is your best friend with this one and it will come together in no time at all. You have to try it!

Caramel Toffee Chex Mix

8 cups corn Chex cereal 
3/4 cup brown sugar
6 Tbsp. butter
3 Tbsp. light corn syrup
1/4 tsp. baking soda
1/2 cup soft caramels (I used Werther’s)
1 Tbsp. heavy cream
1/2 milk chocolate chips
1/2 cup white chocolate melting wafers

1/2 cup Heath toffee bits

Pinch of sea salt, optional


1. Pour Chex cereal into a large microwavable bowl. Set aside. 

2. In a separate microwavable bowl, microwave brown sugar, butter and corn syrup for 1 minute. Stir until smooth. Stir in baking soda.

3. Pour caramel mixture over the cereal and stir to evenly coat. Microwave cereal mixture for 2 minutes, stirring after every minute.

4. Spread onto a baking sheet lined with waxed or parchment paper. Allow to sit for about 10 minutes and then break into large pieces.

5. In a small microwavable bowl, add caramels and cream. Microwave for 30 second intervals until it can be stirred smooth. Use a spoon to drizzle caramel evenly over the top of the cereal.

6. In another small bowl, microwave chocolate chips in 30 second intervals, stirring after each, until smooth. Use a spoon to drizzle chocolate over the cereal mixture.

7. In a small bowl, microwave white chocolate in 30 second intervals, stirring after each, until smooth. Use a spoon to drizzle the white chocolate over the cereal mixture.

8. Sprinkle Heath toffee bits evenly over the Chex mix. Sprinkle sea salt over the top if desired.

9. Allow chocolate to harden before serving. (Place in the fridge or freezer for a quicker set.)
