Muddy Buddy Bars

 
If you are as big of a fan of Muddy Buddies as I am, then you need this recipe in your life! I've seen a similar recipe on the Internet for years and I finally got around to trying them. The first recipe I used was a bust because they were so dry and fell apart with each bite. I have a recipe for the best scotcheroos on the blog and thought I would try to adapt it to make these. It was the best idea and these turned out exactly how I wanted. They are covered in chocolate and peanut butter and so chewy. I had to give most of them away so I didn't eat the whole pan myself. I promise you will love these and they would make a great neighbor treat!

Muddy Buddy Bars

1 cup light corn syrup

1 cup sugar

1 cup creamy peanut butter

1 cup semi-sweet chocolate chips

6 cups Rice Chex cereal

1/4 cup powdered sugar, sifted


1. Lightly grease a 9x13-inch pan with cooking spray. Set aside.

2. Combine corn syrup and sugar in a large saucepan over medium heat; stirring often. Bring mixture to a boil (just until bubbles start to appear throughout the mixture) and remove from heat. 

3. Meanwhile, place peanut butter and chocolate chips in a microwave-safe bowl and microwave on HIGH for 30 seconds. Stir and continue in 15-second increments until completely melted.

4. Add peanut butter/chocolate mixture into corn syrup mixture. Whisk until combined.

5. Add cereal 2 cups at a time; stirring between each addition. Stir until evenly coated. Pour into greased pan and press down into an even layer. Let cool in fridge for 20 minutes.

6. Remove from fridge and sprinkle powdered sugar on top of the bars. Shake the pan or spread with the back of a spoon to coat the top. Let bars cool completely before cutting into squares.
