Garlic Butter Shrimp

If you've ever been lucky enough to go to Oahu and had the garlic shrimp from Giovanni's food truck you know how good it is! It's loaded with garlic and butter and you just can't get enough. Fortunately, I'm bringing a similar dish to you and your family that you can enjoy any time you like.
Shrimp is one of the easiest things to cook and it takes less than 5 minutes in a skillet. Add some butter, garlic and a few spices and you've got an irresistible dish. Serve it with some rice, pasta or a veggie on the side and you have the perfect summer meal.

Garlic Butter Shrimp

Adapted from Cooking Classy

1 lb. extra large shrimp, peeled and deveined

1/4 cup minced garlic

1 Tbsp all-purpose flour

1 1/2 tsp. paprika

salt and freshly ground black pepper

6 Tbsp unsalted butter, diced into 1 Tbsp pieces

2 Tbsp. olive oil

1 Tbsp. fresh lemon juice

1. Using paper towels, dab shrimp dry of excess moisture on both sides. Place in a large bowl.

2. Sprinkle with flour, paprika, salt and pepper as desired. Toss to evenly coat.

3. Melt butter with olive oil in a large non-stick skillet.

4. Add garlic and sauté 30 seconds until nicely fragrant. Be careful not to brown.

5. Add shrimp in an even layer in skillet. Cook on first side until pinkish color on bottom, about 2 minutes. Then flip and cook opposite side until just cooked through, about 2 minutes longer.

6. Remove from heat and toss with lemon juice. Serve warm with extra butter sauce over rice, pasta or with a veggie side.
