Cowboy Salad

I don't know about you, but a good salad to me is one that is heavy on the toppings and this Cowboy Salad is just that! It's loaded with veggies, bacon, cheese, black beans and the best BBQ dressing ever. We all agreed this salad was a true winner and we're going to be making this time and time again!
Now don't you want to take a big bite of this??

Cowboy Salad

Adapted from Oh Sweet Basil

10 oz. romaine lettuce, chopped

1 (15 oz.) can of black beans, drained and rinsed

6 slices bacon cooked and chopped

10 oz. grape tomatoes, chopped

1 cup colby jack cheese, shredded

1 medium red bell pepper, finely chopped

1/2 red onion, diced

1/2 cup cilantro, chopped


1/2 cup mayo

1/4 cup BBQ sauce

1 Tbsp. Dijon Mustard

1 Tbsp. Worcestershire sauce

1 Tbsp. lime juice

1. For the dressing, whisk together all of the ingredients until combined and set aside. 

2. For individual servings, layer lettuce in bowls with all of the toppings and dressing. If serving a crowd, toss together all of the salad ingredients and dressing in a large bowl.
