Thai Chicken Salad with Peanut Sauce Dressing

I absolutely love fresh salad in the summer and this Thai Chicken Salad with Peanut Sauce Dressing is no exception. So many fun and flavorful ingredients with the best dressing! You can cook the chicken on the grill or in your air fryer and either will yield perfect results! This salad comes together in no time and is a definite crowd pleaser. I hope you'll try it out!


Thai Chicken Salad with Peanut Sauce Dressing

2 boneless chicken breasts
1/3 cup soy sauce
1/4 tsp. ground ginger
For the dressing:
2 tsp. garlic, minced
1/2 tsp. red curry paste
2 Tbsp. soy sauce
2 Tbsp. vinegar
1 Tbsp. sugar
1 Tbsp. fresh lime juice
1 Tbsp. olive oil
1/4 cup creamy peanut butter
1/4 cup water
For the salad:
1 lb. romaine lettuce, chopped
1 cup shredded carrots
3/4 cup wonton crisps or chow mein noodles

1. To make the chicken, whisk soy sauce and ginger together in a small bowl. Place chicken in mixture and marinade in fridge for one hour. After marinating, prepare grill for medium-high heat. (You could also use this air fryer recipe.) Place the chicken on the grill and cook until the juices run clear, about 5 to 8 minutes each side.
2. To make the dressing, combine garlic, pepper, soy sauce, vinegar, sugar, lime juice, oil and in a small bowl. Whisk until smooth. Add the peanut butter and water and whisk again until smooth and creamy.
3. To assemble the salad, layer lettuce, shredded carrots, wonton crisps and dressing in individual bowls.
