Slow Cooker Smoky Honey Cilantro Chicken

I'm a huge fan of my slow cooker in the summer when I don't want to turn on my oven, but still want a hot meal. I'm also a huge fan of slow cooked chicken. There's nothing better than tender, juicy chicken marinating in a delicious sauce all day. This Slow Cooker Smoky Honey Cilantro Chicken is my new favorite and it has so much delicious flavor! It's a simple recipe, but the result is perfection!
I served the chicken over this cilantro-lime rice and topped it with some black beans, mango and more cilantro. You could serve it in tacos, burritos, enchiladas, on a salad or whatever and it would all taste amazing. It's the perfect summer meal and your whole family will love it!


Slow Cooker Smoky Honey Cilantro Chicken

1 cup salsa verde
1/4 cup honey
1 Tbsp. liquid smoke
2 tsp. chili powder
1 tsp. salt
1 tsp. dried oregano
1 tsp. cumin
1 tsp. garlic powder
1/2 tsp. smoked paprika
1/4 tsp. black pepper
1/2 cup chopped fresh cilantro
3-4 boneless chicken breasts

1. Whisk together the salsa verde, honey, liquid smoke, chili powder, salt, dried oregano, cumin, garlic powder, smoked paprika and black pepper.
2. Add the salsa verde mixture to the pot of a 5 or 6-quart slow cooker. Nestle the chicken into the sauce. Cover the slow cooker and cook on low for 6-7 hours.
3. Shred the chicken with two forks inside the slow cooker. Stir in the fresh cilantro and add additional salt and pepper to taste, if needed.
4. Serve the chicken in tacos, enchiladas, burritos, salad, rice bowls, etc.
