Moroccan Chicken Skewers with Amazing Green Sauce

Summer is all about grilling in my book and these Moroccan Chicken Skewers are out of this world! They have the best flavor and the Amazing Green Sauce that goes with them is incredible. Add some roasted potatoes or another veggie as a side and you've got yourself one delicious dinner.
This recipe technically calls for a lot of ingredients, but most of them are spices you most likely have in your pantry. The green sauce is extra special though because it combines fresh cilantro and mint, which I just love. This is one of those meals you need to try for yourself to know how good it really is. I promise you'll love it!


Moroccan Chicken Skewers with Amazing Green Sauce

Chicken:
Zest of 1 lemon
1/2 cup fresh lemon juice (from about 2-3 lemons)
1/4 cup olive oil
4 tsp. garlic, minced
1/4 tsp. ground ginger 
1 tsp. ground cumin
1 tsp. ground turmeric
1 tsp. kosher salt
 1/4 tsp. black pepper
 2 large chicken breasts cut into 1-inch pieces

Green Sauce:
1 cup fresh cilantro
1/2 cup fresh mint leaves
1/4 cup chopped green onions
1/2 jalapeño, seeded and coarsely chopped
3 Tbsp. olive oil
Zest of 1 lemon
2 Tbsp. fresh lemon juice
1 tsp. honey
Pinch of kosher salt, more to taste

1. For the chicken: In a large bowl, whisk together the lemon zest, lemon juice, olive oil, garlic, ginger, cumin, turmeric, salt and pepper. Place the chicken pieces in bowl and toss to coat. Cover and refrigerate for at least 2 hours.
2. For the sauce: In a blender or food processor add all the ingredients and puree until desired consistency.
3. Brush grill grates with oil. Preheat grill to medium-high heat. Thread the marinated chicken pieces onto soaked wooden or metal skewers.
4. Grill for 6-8 minutes, turning once or twice, until cooked through. Serve the chicken skewers with green sauce.
