Cookie Dough Blended Overnight Oats

I have never been a huge fan of overnight oats because the texture is not for me. Enter in blended overnight oats and I'm the biggest fan! These oats are so creamy and the chocolate "frosting" on top is the best part. It becomes a bit of a treasure hunt and those creamy chocolate pieces are heaven.
This is a great healthy treat that is packed with protein. I honestly crave it and could eat it every day. You've got to give it a try!

Cookie Dough Blended Overnight Oats

Makes 2 servings

1/2 cup old-fashioned rolled oats

1 scoop vanilla or coconut plant-based protein, about 1/4 cup

1 Tbsp. chia seeds

1 1/4 cup almond milk

1 Tbsp. almond butter

1 tsp. vanilla extract

1 Tbsp. dark chocolate chips


Chocolate Frosting

1/4 cup dark chocolate chips

3 Tbsp. low sugar vanilla or coconut yogurt


1. In a blender, add in oats, protein powder, chia seeds, almond milk, almond butter, vanilla extract and chocolate chips. Blend until smooth and creamy, about 30-60 seconds. 

2. Pour batter into a medium bowl. Cover and refrigerate for a minimum of 4 hours or overnight.

3. When ready to serve, melt chocolate chips in a bowl in 30-second intervals. Stir in yogurt until smooth. If this hardens, microwave it for 10-15 seconds.

4. Spread chocolate mixture over your blended oats. This can be tricky, but try to evenly distribute it in the oats mixture.
