Parmesan 4-Ingredient Bagels

When I first heard of these bagels, I was very skeptical. How can they have so few ingredients, especially when one of the main ingredients is greek yogurt? I don't know what voodoo magic takes place making these, but they are incredible. And yes, besides the parmesan, there are only 4 ingredients, believe it or not.
These bagels are amazing on their own, but the Parmesan makes them extra special. The recipe only yields 4 bagels, but it's easy to double.
Once they're done, slice them open, toast them and smear them with some cream cheese and you're good to go. These are high in protein and make the perfect on the go snack!

Parmesan 4-Ingredient Bagels

Yields: 4 bagels

1 1/4 cup all purpose or whole wheat flour or 1 cup Kamut flour

1 Tbsp. baking powder

1/2 tsp. salt

1 cup plain Greek yogurt

1 egg + 1 Tbsp. water for egg wash, mixed in a bowl

1/2-3/4 cup shredded Parmesan

1. In a large bowl, whisk together flour, baking powder and salt.

2. Add Greek yogurt and mix with your hands until a dough is formed. It helps to squeeze ingredients together to form the dough.

3. Once ingredients are well incorporated, roll the dough into a ball and place in the mixing bowl. Cover with a damp towel and allow to rest for 10 minutes.

4. Preheat oven to 375 degrees F and prepare a baking sheet by lining it with parchment paper or a silicone baking mat.

5. When ready, remove the dough from the mixing bowl and place on a clean, lightly floured surface.

6. Knead once more and then cut into 4 even sections. Take a section and use your finger to poke a hole in the center and mold into a large, semi flat bagel. Repeat with remaining dough.

7. Place bagels on the prepared baking sheet and brush each one with the prepared egg wash. Sprinkle about 2 Tbsp. of Parmesan on each bagel, pressing down lightly.

8. Bake for 20-25 minutes. Remove from oven and let cool for 5-10 minutes before slicing. Serve toasted with cream cheese.
