Biscoff Cookie Butter Blondies

 

We all know I'm a huge cookie butter fan and not only do I love to eat it, but I love to bake with it! This is another great cookie butter recipe that will have your mouth watering just by looking at them. They are incredibly soft and chewy and that Biscoff cookie on top is the best part. You don't want to take a bite without that added crunch and flavor. I made these for a neighborhood party and they were gone in no time! This recipe makes a 9x13-inch pan's worth, but you can always half the ingredients and make them in an 8x8-inch pan. Either way, they'll be a big hit!


Biscoff Cookie Butter Blondies

1 cup unsalted butter, melted

1 cup Biscoff cookie butter

2 cups brown sugar

2 large eggs

4 tsp. vanilla extract

3 cups all-purpose flour

1 tsp. cinnamon

1/2 tsp. salt

1 (8.8 oz.) package Biscoff cookies, broken into 3 or 4 pieces


1. Preheat your oven to 350 degrees F. Line a 9×13-inch baking dish with foil and lightly spray  with cooking spray. Set aside.

2. In a stand mixer with a paddle attachment, combine the melted butter, cookie butter and brown sugar until smooth. 

3. Mix in the eggs and vanilla until fully combined.

4. Add in the flour, cinnamon and salt. Mix until the dough comes together.

5. Press the dough into your prepared pan so that it touches the edges and is nice and even. Press the crumbled cookies on top.

6. Bake for 25-30 minutes or until the center is not sticky to the touch.

7. Remove and leave them in the pan for at least 20 minutes.

8. Once cooled, remove the foil, slice and enjoy!
