Circus Animal Sprinkle Cookies

 
I don't know about you, but when a bag of Mother's Circus Animal cookies are in my house, I cannot stop eating them! They have such a unique flavor and the combo of the frosting and the cookie is completely addicting. I have seen so many different recipes using these cookies and I thought I would make up my own. These cookies are incredibly soft, chewy and have just the right amount of Circus Animal cookies and sprinkles swirled inside. These are a delicious treat and look how fun they are! You have to smile when you see a plate of these.
Just look at the inside! The key to baking these cookies (and all cookies) is to underbake them. Don't be nervous about it. It will keep them soft and chewy for days.

Circus Animal Sprinkle Cookies

8 Tbsp. (1 stick) unsalted butter

1/2 cup light brown sugar, packed

1/3 cup white sugar

1 large egg

1/2 Tbsp. vanilla extract

2 tsp. cornstarch

1/2 tsp. baking soda

1/2 tsp. baking powder

1/2 tsp. salt

1 3/4 cups all-purpose flour

1 1/2 cups Mother’s Circus Animal Cookies

2 Tbsp. rainbow nonpareils sprinkles


1. Melt the butter in a small, microwave-safe bowl. Once melted, refrigerate for 5-10 minutes until cool. (You don’t want the butter to be hot or it will melt the sugar.)

2. Once butter has cooled, pour it into a stand mixer with a paddle attachment. Add the light brown sugar and white sugar. Mix until smooth. Add in the egg and vanilla extract. Mix again until smooth.

3. Add in the cornstarch, baking soda, baking powder and salt. Stir until smooth. Add in the flour and mix until just combined. Don't overmix.

4. Add in the circus animal cookies and sprinkles and mix until evenly distributed and the cookies have been broken down into small pieces. Cover and chill for 30 minutes in the fridge.

5. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone liner. Using a cookie scoop, mold dough into balls and place 2 inches apart on the pans.

6. Bake for 9-10 minutes, being careful not to overbake.

7. Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
