Pear, Feta and Candied Almond Salad with Honey Vinaigrette

 
I love a good salad in the summer and have so many on this blog! They are so easy and refreshing. This however is my first pear salad! I love the combination of fresh pears, feta cheese and candied cinnamon almonds with the best honey vinaigrette. It's a perfect combo and I think everyone would love it!

Pear, Feta and Candied Almond Salad with Honey Vinaigrette

Makes 4-6 servings

1/2 cup sliced almonds

2 Tbsp. sugar

2 Tbsp. brown sugar

1 tsp. cinnamon

1/4 cup olive oil

1/4 cup honey

3 Tbsp. red wine vinegar

1 tsp. Dijon mustard

1 tsp. garlic, minced

1/2 tsp. kosher or sea salt

1/4 tsp. black pepper

10 oz. baby spring lettuce mix

1-2 large pears, peeled, cored and thinly sliced

3 oz. feta cheese, crumbled


1. In a medium nonstick skillet, combine the almonds, sugar and brown sugar over medium heat. Stir continuously for 5 to 7 minutes until the sugar has melted and coated the nuts. Watch closely so the sugar doesn’t get too dark and burn. Remove from heat and stir in the cinnamon. Spread nuts into a thin layer and let cool completely. Break apart if they have clumped together.

2. In a small bowl or jar, add oil, honey, vinegar, mustard, garlic, salt and pepper and whisk together until combined. Store in the fridge until ready to use and stir before serving.

3. Place the lettuce and pear slices in individual bowls. Add the candied almonds and feta cheese crumbles. Drizzle with vinaigrette and serve immediately.
