Cherry Chocolate Chunk Almond Ice Cream

 
I recently tried an almond based ice cream and I could not get over the flavor! It tasted like amaretto and I couldn't get it out of my head. I have always been a fan of amaretto flavor, which has almond and cherry tones. This is why you often see almond and cherries in desserts together. They are made for each other!
So in this recipe you have an almond flavored ice cream mixed with fresh cherries and chocolate chunks, making an irresistible summer treat. It's so easy to throw together in an ice cream maker and everyone will think you got it from an ice cream shop. Be sure to try it while cherries are in season!

Cherry Chocolate Chunk Almond Ice Cream

1 1/4 cup milk

1/2 cup sugar

2 cups cream

1/2 Tbsp. almond extract

1/8 tsp. salt

1 cup pitted fresh cherries, sliced into fourths

1/2 Tbsp. sugar

3/4 cup chocolate chunks 


1. In a large bowl, beat milk and 1/2 cup sugar with a hand mixer until sugar is dissolved. Whisk in cream, almond extract and salt until combined. Let chill in fridge for 30 minutes.

2. While the mixture is chilling, combine cherries and 1/2 Tbsp. sugar in a small saucepan and cook for 5 minutes over medium heat, stirring constantly until the sugar has dissolved. Let cool completely.

3. Pour the chilled mixture into an ice cream maker and freeze according to the manufacturer’s instructions. In the last 5 minutes of churning, gradually add in the cherries and chocolate chunks.

4. Transfer the ice cream to a large airtight container. Cover and freeze until the ice cream is firm for at least 2 hours or overnight. Let thaw for 10 minutes before serving if needed.
