Buckeye Bars

 
I am all about anything chocolate and peanut butter flavored and these Buckeye Bars are out of this world. I have a recipe for classic Buckeyes, which are perfectly bite-sized, but these bars are next level! They have one thick layer of peanut butter filling that tastes so similar to Reese's and then they are layered with some smooth delicious chocolate on top.
Don't you just want to take a bite out of these bars?? You've got to make them and they are the perfect no-bake treat!

Buckeye Bars

Adapted from Shugary Sweets

3/4 cup unsalted butter, melted

3 1/2 cups powdered sugar

1 1/2 cups creamy peanut butter

1 tsp. pure vanilla extract

16 oz. semisweet chocolate chips

1 Tbsp. butter


1. Line a 9x13-inch baking dish with foil and set aside.

2. In a large mixing bowl, beat melted butter, powdered sugar, peanut butter and vanilla extract together until the mixture turns into a dough. Using your hands, press into the bottom of the line baking dish.

3. In a large microwavable bowl, combine chocolate chips with 1 tablespoon butter. Heat for 30 second intervals, stirring until chocolate is smooth. Spread evenly over top of peanut butter layer. Allow chocolate to set before cutting.


*Store in airtight container at room temperature.
