Peppermint Bark Rice Krispies Treats

 
I'm a huge peppermint bark dessert fan and if you don't believe me, search for all of the peppermint bark recipes on my blog! There's something so Christmasy about peppermint bark and I love the flavor combination. While peppermint bark would be fun to make on its own, I love to make different variations on other desserts. Enter these Peppermint Bark Rice Krispies Treats!
I've perfected my Rice Krispies treat recipe so they are extra gooey and chewy and then add some melted chocolate and peppermint candy on top and you have yourself the perfect holiday treat! These would be perfect for a get together or on a treat plate for family and friends. And they're so easy, too! I hope you try them.

Peppermint Bark Rice Krispies Treats

1/4 cup unsalted butter

10 oz. mini marshmallows

5 cups Rice Krispies cereal

1/2 cup chocolate chips

1/2 cup white chocolate melting wafers

1/4-1/2 cup crushed candy cane or soft peppermint candy


1. Grease a 9x13-inch pan and set aside.

2. In a large pan, melt butter and mini marshmallows on low heat, stirring constantly.

3. Remove pan from heat and add Rice Krispies, 2 cups at a time. Mix well until cereal is evenly coated. Pour into the greased pan and press down with a greased spatula.

4. Microwave chocolate chips in a small microwave-safe bowl in 15-30 second increments until melted, stirring between each interval. Repeat in a separate bowl with the white chocolate wafers.

5. Using a fork, drizzle the melted chocolate over the Rice Krispies and repeat with the melted white chocolate. Sprinkle crushed candy cane evenly over the chocolate.

6. Let harden before serving and cut into squares. (If short on time, stick the pan in the freezer for 10-15 minutes until chocolate is set.)
