Orange Chicken Lettuce Wraps

One of my all-time favorite Asian dishes is orange chicken and even though it's delicious, it can be a bit of a process to make at home. At least that was until these Orange Chicken Lettuce Wraps came to be. This recipe calls for ground chicken with an orange sauce that is so easy to cook and even easier to eat! I love how lettuce wraps add a freshness and crunch to each bite of meat. These really have the best orange flavor and make the perfect summer meal!

Orange Chicken Lettuce Wraps
Adapted from Dinner Then Dessert
1 Tbsp. oil
1 lb. ground chicken or turkey
1 Tbsp. rice wine vinegar
2 Tbsp. water
1/2 tsp. sesame oil
4 tsp. soy sauce
5 Tbsp. sugar
5 Tbsp. white vinegar
zest of 1/2 orange
1 Tbsp. water
1 Tbsp. cornstarch
1/4 tsp. ground ginger
2 tsp. garlic, minced
1/4 tsp. red pepper flakes
cooked white rice, optional
butter (living) lettuce leaves, washed and dried

1. In a large skillet, heat oil and add ground chicken or turkey. Break apart with with a spatula and cook until no longer pink.
2. While chicken is cooking, combine the rice wine vinegar, 2 tablespoons water, sesame oil, soy sauce, sugar, white vinegar and orange zest in a small bowl. Set aside.
3. In another small bowl, dissolve 1 tablespoon cornstarch in the remaining 1 tablespoon of water. Set aside.
4. Once chicken is done, add ginger, garlic and red pepper flakes and cook for 1 minute.
5. Add the orange sauce to the pan and bring to a boil. Add the cornstarch mixture and cook for just a few seconds, stirring until it thickens. 
7. Serve warm with rice, if desired, on top of butter lettuce leaves.
