Slow Cooker Sesame Chicken

I'm all about Asian recipes and have several on my blog, but I had yet to make any in the slow cooker. That is definitely going to change now that I've made this amazing sesame chicken! The chicken becomes so tender and delicious and your whole house smells like red pepper (in a good way.)
I also roasted some broccoli and shredded carrots to put on top and I love the way they tasted. This was easily one of my favorite chicken meals I've had in a long time and I would say to put it on your dinner rotation right away!


Slow Cooker Sesame Chicken

1/4 cup low-sodium soy sauce
1 Tbsp. plus 1 tsp. cornstarch
1/2 cup honey
1 Tbsp. tomato paste
1/4 cup finely diced onion
2 tsp. garlic, minced
1 tsp. crushed red pepper, or to taste
1 lbs. boneless chicken breasts, cut into 1 inch pieces
1 red bell pepper, seeded and thinly sliced
cooked white rice, for serving
sesame seeds
Optional:
roasted or steamed broccoli florets and shredded carrots

1. In a large bowl, whisk together soy sauce and cornstarch until smooth.
2. Whisk in honey, tomato paste, diced onion, garlic and crushed red pepper. 
3. Add chicken and bell pepper to sauce, tossing to coat.
4. Transfer to slow cooker and cook on low for 4 hours. (If left any longer, the chicken and pepper will be extra soft.)
5. Serve over bowls of rice and with broccoli and carrots if desired. Top with sesame seeds to taste.
