Strawberry Granola Pancakes

I know, I know. Another pancake recipe. I think I'm losing my mind. But man, once you figure out how amazing pancakes are when you make them from scratch, there's no holding back. And this combination?? Incredible.
I knew that I would love this combo. I've already made strawberry pancakes before, but adding granola? Pure genius.
These are a new favorite and are so easy to make. As are all pancakes really. They would be a perfect way to brighten up breakfast.
And the granola bits hidden inside?? Talk about amazing. They soften right up, no matter how big they are, and add the perfect surprise to every bite. Can you tell how much I love these?

Strawberry Granola Pancakes
Adapted from The Pioneer Woman and AllRecipes
1 1/2 cups all-purpose flour
3 1/2 tsp. baking powder
1 tsp. salt
1 Tbsp. white sugar
1 1/4 cups milk
1 egg
3 Tbsp. butter, melted
5 whole strawberries, chopped
1/2 cup granola
extra chopped strawberries for topping
extra granola for topping

1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
2. Stir in chopped strawberries and granola. (Don’t worry the granola will soften while cooking.)
3. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

4. Top with strawberries, granola, yogurt syrup or powdered sugar if desired.
