Harvest Salad with Apple Cider Vinaigrette

After eating ALL of the junk food during the holidays, salads are sounding really good right about now. I love salads with as many toppings as possible and this is such a good one! How can you go wrong with crisp apples, salty bacon, creamy feta and sweet cinnamon glazed almonds on top?? The dressing provides the perfect amount of tang to balance it all out. A little goes a long way though!
I mean, how could anyone resist a bowl of that goodness?? Make this ASAP and thank me later!


Harvest Salad with Apple Cider Vinaigrette
1 lb. spring green mix
1-2 large apples (I recommend Honeycrisp or Fuji)
6-8 pieces of bacon, cooked and crumbled
2-4 oz. feta, crumbled
1/2 cup cinnamon glazed almond (I love Kroger’s)

Apple Cider Vinaigrette
6  Tbsp. olive oil
2 Tbsp. apple cider vinegar
1 Tbsp. water
1 Tbsp. dijon mustard
1 Tbsp. granulated sugar
Salt and black pepper to taste

1. Whisk or blend all apple cider vinaigrette ingredients together. Chill until ready to use.
2. Rinse and dry the greens and set aside.
3. Chop the apple into bite-sized pieces.
4. Divide the greens into individual bowls. Top with apple pieces, bacon, feta and almonds. Drizzle desired amount of dressing over each salad and serve.
