Strawberries and Cream Cookies

I love anything with strawberries and have always wanted to make a strawberry-filled cookie. This recipe calls for freeze-dried strawberries and white chocolate chips for the "cream." The cookie is so soft and the strawberries and white chocolate chips compliment each other so well. They are such an easy cookie to make and are perfect for any time of the year!


Strawberries and Cream Cookies

3 cups all-purpose flour
1 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
1 cup unsalted butter
1 1/2 cup brown sugar
1/2 cup white sugar
2 large eggs
2 tsp. vanilla extract
1 cup freeze-dried strawberries, crushed or finely chopped
1 cup white chocolate chips

1. In a bowl of a stand mixer, add flour, baking powder, soda and salt and mix together.
2. In a medium saucepan, over low heat, melt the butter. Remove from the heat and whisk in the brown and white sugars. Next add the eggs and vanilla. Set aside for 5 minutes to cool.
3. Pour mixture into the dry ingredients and mix until combined. Lastly, mix in the freeze-dried strawberries and white chocolate chips until just combined. 
4. Cover with plastic wrap or a towel and transfer to the fridge to chill for at least an 1 hour.
5. Preheat oven to 350 degrees F. 
6. Scoop out 1 1/2-inch balls of dough and roll them between your palms so they are taller than they are wide and place them onto a parchment or Silicone-lined baking sheet. (This shape helps them not flatten out while baking.)
7. Bake for 10 minutes or until lightly golden brown. Let cool on pan for 5 minutes before transferring to cooing rack. Repeat with remaining cookie dough.
