Sweet and Savory Apple-Cheddar Galette

My mom recently bought me a huge container of Honeycrisp apples from Costco that are bigger than my fist and so crisp and delicious. While I love eating them plain, I wanted to do something special with them. I'm honestly not a huge apple dessert fan so I thought I'd try a savory apple galette.

This galette has cheddar in the crust, a perfectly spiced Honeycrisp apple filling and a smothering of thyme butter once its baked. The combination of sweet and savory is just too good! You have to try this while Honeycrisps are still in season!


Sweet and Savory Apple-Cheddar Galette
Adapted from How Sweet Eats
2 cups sifted all-purpose flour
1/2 Tbsp. sugar
1 1/2 tsp. salt
1/8 tsp. dried thyme
1/2 large egg (crack egg into small bowl, whisk and measure 1 1/2 Tbsp.)
1/2 tsp. white vinegar
1/4 cup ice cold water
1/2 cup cold unsalted butter, sliced into 8 pieces
1/3 cup grated sharp cheddar cheese
Egg Wash: 1 egg and 1 tsp. water, whisked together
pinch of white sugar and dried thyme for topping

Filling
2 large Honeycrisp apples, thinly sliced
1 1/2 Tbsp. cornstarch
1 1/2 Tbsp. sugar
1/4 tsp. ground cinnamon
1/4 tsp. ground ginger
1/4 tsp. salt

Thyme Butter
2 Tbsp. unsalted butter, melted
1/4 tsp. dried thyme
pinch of salt

1. Add the flour, sugar, thyme and salt to a food processor and pulse just until combined.
2. In a small bowl, whisk mix together the egg, vinegar and water.
3. Add the cold butter pieces and cheddar into the food processor and pulse until small coarse crumbs remain. Pour the water/egg mixture over the flour mixture and pulse on low until the dough comes together.
4. Remove the dough and wrap it in plastic wrap. Refrigerate the dough for 30 minutes. 
5. Add the sliced apples to a large bowl. Sprinkle the apples with cornstarch, sugar, cinnamon, ground ginger and salt. Toss the apples well and let them sit for 10 minutes.
6. Preheat oven to 400 degrees F.
7. Remove dough from the fridge and place on a parchment paper sheet. Roll dough into a rough oval until it is 1/4-inch thick. Place the parchment paper with dough on a baking sheet.
8. Layer the apples in the center leaving a 2-inch border of crust. Once the apples are layered, fold the crust over top of the apples.
9. Brush the crust with the beaten egg wash. Sprinkle the folded crust edges with sugar and thyme. Bake the galette 40 minutes or until the crust is golden.
10. Whisk butter, thyme and salt together and let sit for 10 minutes.
11. Once galette is done, remove from oven and brush the apples with the thyme butter.
