Pumpkin Spice Rice Krispies Treat Pumpkins

I recently volunteered to bring a Halloween treat to a cooking class and after scouring the web for ideas I decided to make these Pumpkin Spice Rice Krispies Treat Pumpkins. I thought they were adorable and who doesn't love a Rice Krispies Treat?? I decided to add some pumpkin pie spice to the melted marshmallow to make them a little extra special and the combination is perfect.

I also dyed the marshmallow a soft orange, but you can make them as orange as you'd like. They're such an easy treat to make with kids and are perfect for all ages!


Pumpkin Spice Rice Krispies Treat Pumpkins
Makes 14 pumpkins
1/4 cup unsalted butter
10 oz. bag mini marshmallows
6 cups Rice Krispies cereal
yellow and red food coloring
2 tsp. pumpkin pie spice
cooking spray
14 Rolo candies
14 green M&M’s

1. In a large saucepan over medium-low heat, melt butter. Add marshmallows and melt completely, stirring occasionally.
2. Remove from heat. Add 8 drops of yellow food coloring and 4 drops of red food coloring into the melted marshmallow. Stir until combined. Add pumpkin pie spice and mix until combined.
3. Gently fold in Rice Krispies cereal, 2 cups at a time, until evenly coated with marshmallow.
4. Spray the inside of a 1/2 cup measuring scoop with cooking spray and also spray your hands to prevent sticking. While warm, scoop Rice Krispies treat into 1/2 cup measuring scoop, remove and shape into a ball with your hands. Repeat until all of the Rice Krispies treat has been used.
5. While still warm, press a Rolo candy into the center of each pumpkin along with a green M&M for the stem and leaf. Reshape pumpkins if needed and let cool completely before serving.
