Brown Sugar Skillet Peach Cobbler

When peaches are in season, I HAVE to make a new recipe. This year I made a Brown Sugar Skillet Peach Cobbler and the result was fantastic! This peach cobbler is a bit different than most because the topping is so thick, fluffy and cakey, which I personally loved. Add a scoop of vanilla ice cream and you have yourself one amazing dessert! If you or someone in your family loves peaches, you've got to make this!


Brown Sugar Skillet Peach Cobbler

2 Tbsp. salted butter
4 ripe, but firm peaches, thinly sliced
3/4 cup packed light brown sugar, divided
1 tsp. vanilla extract
1 1/4 cup all-purpose flour
2 tsp. baking powder
1 tsp. cinnamon
1 stick (8 Tbsp.) salted butter, melted
1/2 cup whole milk
1/2 Tbsp. granulated sugar + 1/8 tsp. cinnamon, combined

1. Preheat the oven to 400 degrees F.
2. Add 2 Tbsp. butter to a 10-inch oven-safe skillet set over medium heat. Allow the butter to brown until it smells toasted, stirring often, about 3-4 minutes.
3. Remove from heat and add peaches, 1/4 cup brown sugar and vanilla, tossing to combine. 4. Transfer to the oven and bake 10 minutes. Reduce the oven to 375 degrees F.
4. Meanwhile, in a large bowl, whisk together the flour, baking powder, cinnamon and the remaining 1/2 cup brown sugar. Add 1 stick melted butter and the milk, mix until just combined. 5. Remove the peaches from the oven and dollop the batter over the peaches. Dust with cinnamon sugar.
6. Transfer to the oven and bake for 25 minutes or until golden on top. Let cool 5 minutes. Serve warm with vanilla ice cream.
